Butter on Everything!

Herbs, lots and lots of fresh herbs.  I’d use fresh herbs over dried herbs any day.  There are so many great herbs offered to us every week in our CSA boxes, and sometimes it’s hard to know what to do with them.  Well, here’s an idea: herbed butter!  Many of you get bread every week with your boxes, and I just discovered the wonders of raw radishes with butter and salt paired with a crisp Chablis/Chardonnay (see photo, it’s that easy: clean and half radishes, add butter, eat).  C’mon, everything is better with butter, right?

Herbed butter is probably the easiest recipe I’ll ever post.  Here’s how it goes:

Buy some good butter (I used unsalted so I could control the amount of salt)
Leave a stick or two out for a couple of hours to get it soft
Chop up some of the CSA herbs
Crush up some garlic
Fold into softened butter
Give it a taste and season with salt as needed
Slather on everything and enjoy.

Here are some combos I made:
Chive, oregano, basil (basil provided by TJs, but hopefully with some heat, we’ll get some soon).
Rosemary, sage, and thyme
Cilantro and oregano
Fennel, oregano, summer savory
Parsley and mint.

Go crazy, CSAers!  Garlic bread with your spaghetti, tea sandwiches with radishes and cucumbers, herbed popcorn for backyard movie night, baked potatoes, steaks on the barbie, anything goes!

    ooo radishes, good idea. I wish I had you as my farmer! We’ve got some good ones in Whitefish but nobody has a bread board! Looks like your farm is doing so well, nice work
