Zucchini Pie

I stole this from “Grammas Place”, an awesome little family-owned farm in Sherwood. Go check out these ladies, if you’re in the area. They’re a hoot! I don’t know who Aunt Christine is, but this Zucchini Pie looks really easy and delicious. We’re going to try it for dinner tonight.

Aunt Christine’s Impossible Pie:

3 cups grated zucchini (washed, but with skin on for the extra color)
1 chopped onion (fresh walla wallas are delicious in this)
1 cup Bisquick
4 eggs lightly beaten
1/2 cup oil
1/2 cup Parmesan cheese
salt and pepper to taste
Optional:   fresh herbs, peppers, greens, garlic, goat cheese, corn… anything you like.  
Whisk ingredients together, pour them in a greased pie pan and bake for 40 minutes at 350 degrees. Walla!!! *Delicious.*

    how’d you grate the zucc? food processor? Or box grater?

      hey cat! with the box grater, but i’m sure the food processor would work just as well… with the box grater, it takes exactly 3 seconds to grate down a giant arm-sized zucchini.
