    Hey Dirtbox Fans! Here are a couple of awesome recipes for those steamy summer evenings, when you don’t feel like turning on the heat (…..stove that is 😉 in your kitchen. Raw foods, slow foods, farm to table…..yum, yum, yum…..

    Bulghur with Marinated Heirloom Tomatoes (serves 8)

    4 cups water
    2 cups bulghur
    1/2 cup EVO
    1 tsp grated lemon zest
    1/4 cup fresh lemon juice (roughly 2 lemons)
    1 tsp kosher salt
    1/4 tsp freshly ground black pepper
    3 garlic cloves, minced
    1 pound mixed heirloom tomatoes (red, orange, green, yellow) cut into bite-size wedges
    1/2 cup thinly sliced basil
    1/4 cup crumbled goat cheese

    Bring the water to a boil and add to the bulgur, cover and let stand for 20 minutes or so. Drain.
    Combine lemon zest, oil, lemon juice, salt, pepper and garlic in a large bowl with a whisk. Add tomatoes, toss to combine. Let stand 15 minutes.
    Garnish with basil and cheese.

    Broccolini Salad with Feta, Golden Raisins and Pine Nuts

    1 pound of broccolini florets cut into bite -sized pieces, stems chopped fine
    5 T of EVO
    3/4 tsp sea salt
    3 T golden raisins
    1/2 cup toasted pine nuts
    3/4 cup crumbled feta cheese

    Toss broccolini with EVO and salt in serving bowl
    Gently mix in raisins, pine nuts and feta
    Serve cold

    I’m serving this tonight with grilled corn and cumin-lime butter…

    Cumin Lime Butter
    1/4 cup softened butter
    1/4 tsp lime zest
    1/4 tsp lime juice
    1/4 tsp kosher salt
    A pinch of ground cumin
    8 ears of corn

    Combine all the lime butter ingredients and chill ahead. You can even turn it mixture onto to plastic and roll to form a “butter log” for easier application later on your grilled corn 🙂
