Tomato Mania

You’ve already started to receive a fair amount of tomatoes in your shares, and after spending some time yesterday training up the serious, serious growth on all of the tomato plants in the garden, I can guarantee that you can look forward to a tomato onslaught for the next few weeks.

I know a lot of you out there have some great ideas and recipes for what to do with all of these tomatoes, so PLEASE SHARE THEM HERE!     We made some terrific sauce with all the cherry tomatoes that split after last week’s rain…

    onion, garlic, basil, cherry tomatoes (whole), a hot pepper, salt, pepper all blended up with a stick blender and then simmered for an hour or so on low heat. Then we added a bunch of grated parmesan and it was awesome.

    I like to cut the cherry tomatos in half, then slice up a couple cukes and an onion, toss those with vinegar & water (red wine, white white or regular is just fine) and add some dill. The longer they sit in the brine, the tastier the salad. It’s also good with full-strength basalmic as well.

    Or, you can pan fry some chicken breasts with balsalmic, then add halved cherry tomatoes for the last few minutes of cooking & douse some more basalmic on top. Yum!

    Of course, one thing that is always a treat, is to sit in front of the TV with a pint of cherry tomatoes in your lap! Awesome snack food!
